- Pelar las zanahorias y cortarlas en láminas finas. Pelar las patats y hacerlas en trozos de 1/4 aprox (a mi de una patata me salen unos 4-6 tacos).
- Pelar la cebolla y ajos. En mi caso yo los trituro. Pongo a calentar aceite de oliva en la olla y lo sofrio todo junto.
- Cuando esta a medias añado unos 200 gr de tomate triturado natural y termino de sofreírlo todo junto. Cuando el sofrito está listo añado el pimentón dulce y sin dejar de mover para que no se queme lo sofrio todo de nuevo.
- Añado el agua, las hebras de azafrán, la sal, las patatas y las zanahorias. Cuando arranca a hervir lo dejo unos 20-25min.
- Cuando pasa este tiempo las patatas están ya casi, añado las albóndigas, los guisantes y los champiñones en láminas (estos dos últimos los añado en este momento porque son de lata cocidos, si usas crudos añádelos cuando las patatas). Dejar cocer 15 minutos más.
- Corregir de sal y listo! A disfrutar!
