- El día que harán las albóndigas lo primero que harán temprano en la mañana es remojar el pan (de preferencia que sea francés), un rato antes que empiecen a cocinar, lo exprimen bien y lo reservan.
- La carne molida previamente descongelada, la enjuagan, escurren y la ponen en un bowl para comenzar a aderezar. Le colocan el pan exprimido, la sal, pimienta, orégano y comino y con las manos limpias y secas comienzan a aplastar la mezcla logrando que se incorporen los ingredientes quedando finalmente todo bien compacto.
- Luego agregan un poco de la cebolla (reservan un poquito para el aderezo posterior), cascan el huevo allí mismo, el perejil y comienzan a mezclar con el tenedor y finalmente una última aplastada a todo.
- En una olla pondrán aceite a calentar, colocan la cebolla que reservaron antes, el ajo molido, dejar que fría un poco para luego añadir el tomate picado y el ají colorado, mover bien el aderezo y si gustan le añaden más orégano, es al gusto.
- Cuando el aderezo esté bien frito, añaden agua hirviendo (caliente), la hoja de laurel y le bajas el fuego.
- Trabajarán la masa de la carne con las manos bien limpias y lavadas, ponen la harina en un plato y pasan las palmas por la harina para luego tomar un poco de carne, hacen las bolitas y las meten a la olla, así con toda la carne.
- Antes de tapar la olla verifiquen si falta agua, si es así añaden más (que esté hirviendo) y tapan la olla.
- Cuando comience a hervir añaden la zanahoria y si tienen arverjitas también (no le puse esta vez porque no tenía) y el pimiento, dejan que se cocine un ratito más, apagan el fuego y listo, servir caliente y disfrutar 😋
