  7. 8 oz. camarones pelados, devenados y cortados a lo largo por la mitad
  8. 8 oz pescado halibut cortado en pedazos de 1 cm. sin piel (pescado blanco)
  9. 8 oz. carne de langosta cortado en pedazos de 1 cm. (previamente cocida)
  10. 7 cdas. mantequilla sin sal, dividida
  11. 1 cda. harina
  12. sal gruesa (kosher)
  13. a gusto pimienta
  14. 3 tazas puerros cortados estilo juliana ( en tiritas)
  15. 1 1/2 taza zanahorias cortadas estilo juliana
  16. 1 taza panko ( pan rallado japones) puede sustituir por el comun si lo desea
  17. 1/3 de taza queso parmesano rallado
  18. 2 cdas. perejil picado
  19. 1 cda. estragon picado
  20. 1 cda. ajo picadito (2 dientes)

  1. Pre-calentar el horno a 375-F.
  2. Combine el consome, nata, 1/2 taza de vino, el pure de tomate y el azafran en una cacerola mediana. Una vez que comience a hervir, baje la llama y añada los camarones. Al cabo de 3 mins. retire los camarones con un cucharon y coloquelos en un bol; repita el mismo proceso con el pescado y retire a los 3 min. colocandolos en el mismo bol junto con los camarones. Agregue los pedazos de langosta al bol tambien.
  3. Continue cocinando la salsa hasta que se haya reducido por la mitad- unos 12 mins.- Pise la mantequilla junto con la cda. de harina hasta obtener una pasta y agreguelo a la salsa con 1 cdta. de sal y 1/2 de pimienta revolviendolo para que no se haga grumos. Cocine a fuego lento, revolviendo frecuentemente hasta que la salsa se espese ( unos 5 mins). retire del fuego y deje al costado.
  4. Derrita 3 cdas. de mantequilla en un sarten mediano y agregue los puerros y las zanahorias y cocinelas a fuego medio por unos 5 mins o hasta que se ablanden; agregue la 3 cdas. restantes del vino blanco, 1/3 cdta. de sal y 1/4 de cdta. de pimienta y cocinar por 5 a 10 mins, hasta que esten tiernas. Poner al costado.
  5. Combine el panko ( pan rallado), el queso parmesano, perejil, estragon y ajo. Mezcle el resto de la mantequilla derretida en el pan rallado hasta que quede humedecido.
  6. En una fuente para el horno, coloque los mariscos al fondo, las verduras encima y luego eche la salsa hasta cubrirlos. Antes de meterlo al horno, cubra con el pan ralldo y hornee por unos 20 mins. o hasta que dore. Servir caliente.
